Directions
Toast & cool
In a dry frying pan over medium heat, toast pistachios for 3–4 minutes, stirring constantly until fragrant.
Remove from heat and cool slightly.
Blend
Transfer pistachios to a food processor.
Add icing sugar, oil, vanilla, and salt.
Process
Blend, scraping down the sides as needed, until smooth and creamy.
If too thick, add the extra teaspoon of oil.
Jar & chill
