Ingredients

200g dark chocolate (roughly chopped)

100ml double cream

1 tablespoon unsalted butter

Pinch of sea salt (or to taste)

Cocoa powder or desiccated coconut (for rolling)
Directions
Warm the Cream: In a small saucepan, heat the double cream over low to medium heat until it just begins to simmer.
Melt in Chocolate & Butter: Remove from heat, add the chopped dark chocolate and butter, then stir until fully melted and smooth.
Season & Chill: Stir in a pinch of sea salt. Let the mixture cool, then cover and refrigerate for about 2 hours, or until firm.
Shape: Scoop out small portions of the chilled chocolate mixture using a spoon or melon baller, then roll into bite-sized truffles*.
Finish: Coat each truffle in either cocoa powder or desiccated coconut.
* Top tip – when rolling your truffles, it’s important that your hands don’t get too warm, so keep a bag of frozen peas by your side & hold between rolling the chocolates!
