For the pastry
For the filling:
Directions
Step 1: Make the pastry
In a mixing bowl, rub the flour and butter together until the mixture resembles fine breadcrumbs.
Stir in the sugar, then add the egg yolk and cold water, one tablespoon at a time, mixing until the dough just comes together.
Wrap the pastry in cling film and chill in the fridge for 20 minutes.
Step 2: Pre-bake the tart case
Preheat the oven to 180°C (160°C fan) / Gas Mark 4.
Roll out the chilled pastry on a lightly floured surface and line a 23cm loose-bottomed tart tin.
Prick the base with a fork, line with baking paper, and fill with baking beans.
Bake for 15 minutes, then remove the paper and beans and bake for another 5 minutes until lightly golden.
Step 3: Prepare the filling
Melt the butter, golden syrup, and sugar together in a saucepan over low heat.
Remove from the heat.
Stir in the chopped Whitaker’s dark chocolate until melted and smooth.
Allow to cool slightly, then beat in the eggs, vanilla extract, and salt.
Stir in half the pecans and pour the mixture into the baked pastry case.
Arrange the remaining pecans on top in a circular pattern.
Step 4: Bake
Bake the pie for 30–35 minutes or until just set with a slight wobble in the centre.
Cool completely in the tin before removing and serving.
