Made with our finest Whitakers chocolate (all made in the UK), they're sure to satisfy even the most discerning chocoholics.
Whether you're vegan, dairy-free, or simply looking to try something new, this recipe is an absolute corker.

Ingredients

100ml warm water

60g flaxseed

260g caster sugar

300g (Whitakers) dark chocolate raspberry squares

160g vegan butter
-
2tsp vanilla extract
-
210g plain flour (can be GF + 1/4tsp of xanthan gum)

2tsp baking powder
-
80g cocoa powder

Optional: Fresh raspberries, raspberry jam, extra dark chocolate raspberry squares
Directions
Preheat oven to 180°c.
Line a 8 inch square tin with baking paper.
Combine the water and flaxseed together.
Leave for 5-10 minutes until thickened.
Break up the chocolate into a bowl and melt in the microwave in 10 second bursts, stirring in between till smooth.
Melt the butter in a pan or a microwave.
In a bowl combine the melted butter and sugar together.
Add in the flax egg, melted chocolate and vanilla.
Fold in the flour, baking powder (xanthan gum if using) and cocoa powder till all combined and smooth.
Spread the mix evenly into the tin.
If adding in the extra toppings - spoon tsp of raspberry jam across the top and use a skewer to swirl it through.
Place raspberries and pieces of chocolate randomly across the top.
Bake for 30-40 minutes till a skewer inserted in the middle comes out almost clean (you want a few bits to stick but not wet mixture).
Leave to cool completely.

The History of Vegan Chocolate Brownies
The chocolate brownie first appeared in the United States in the late nineteenth century.
A popular story credits Bertha Palmer with its creation. She was a wealthy Chicago socialite.
In 1893 she asked chefs at the Palmer House Hotel for a small portable dessert. The request came for ladies attending the World Columbian Exposition.
The chefs produced a dense chocolate square. Some early versions included walnuts and an apricot glaze.
Recipes soon appeared in American cookbooks. One early printed recipe used molasses rather than chocolate.
The first known chocolate brownie recipe surfaced in a 1904 Chicago cookbook. Chocolate versions gained popularity in the early twentieth century.
Brownies crossed the Atlantic and reached British cooks by 1915. May Byron included two brownie recipes in her Cake Book that year.
Vegan chocolate brownies have a much shorter history. They emerged as plant based diets became more common in the twenty first century.
Home bakers replaced eggs with a mixture of flaxseed and water. Vegan butter took the place of traditional butter.
Dark chocolate without milk became the main ingredient. These changes produce rich and fudgy results.
