This easy UK recipe uses aquafaba for a light, airy texture, perfect for a decadent dessert.
Ready in just over an hour, it’s a great choice for dinner parties, special treats, or a simple after-dinner delight.
Garnish with berries or nuts for a touch of elegance!

Ingredients
-
150g Whitakers Chocolates Dark Chocolate
-
200ml aquafaba (liquid from a tin of chickpeas)
-
¼ tsp cream of tartar (or a few drops of lemon juice)
-
2 tbsp maple syrup (or agave syrup), adjust to taste
-
1 tsp vanilla extract
-
Pinch of salt
Directions
Melt the chocolate
Place the chopped Whitakers dark chocolate in a heatproof bowl.
Melt gently over a pan of simmering water (bain-marie) or in the microwave in 20-second bursts.
Set aside to cool slightly.
Whip the aquafaba
In a clean mixing bowl, combine aquafaba and cream of tartar.
Using an electric mixer, whisk on high speed for 5–7 minutes until stiff peaks form (like whipped egg whites).
Add sweetness
Gently whisk in the maple syrup, vanilla extract, and pinch of salt.
Fold in the chocolate
Once the chocolate has cooled but is still pourable, carefully fold it into the whipped aquafaba using a spatula.
Take your time to fold gently, maintaining as much air as possible.
Chill
Divide the mousse into 4 serving glasses or ramekins.
Refrigerate for at least 1 hour, preferably 2–3 hours, until set.
Garnish:
Sprinkle with grated Whitakers dark chocolate or chocolate curls.

How to Store Your Homemade Vegan Chocolate Mousse
To keep your Whitakers dark chocolate vegan mousse fresh and silky, follow these simple storage tips.
1 - Fridge:Store the mousse in airtight containers or cover the serving glasses tightly with cling film.
Keep in the fridge for up to 3 days to maintain its smooth texture and rich flavour.
2 - Freezer:Freezing is not recommended, as the aquafaba-based mousse may lose its light, airy texture and become grainy when thawed.
3 - Whitakers Tip:For the best taste, serve chilled straight from the fridge.
If adding toppings like berries or coconut cream, add them just before serving to keep them fresh.
