We all love a bit of chocolate cake and if you fancy having a go and making this delicious vegan and gluten free cake then you should.
Even if you are not a natural or confident baker, we have been told this recipe for vegan-frinedly chocolate bundt cake is really easy to follow.

Ingredients

350g Gluten Free Flour Blend

1 tsp Xanthan Gum

180g Caster Sugar (White)

180g Soft Brown Sugar

75g Cocoa Powder

2 tsp Baking Powder

1 tsp Bicarbonate of Soda

1/2 tsp Salt

120g Dairy Free Natural Yogurt
-
120ml Dairy Free Milk
-
180ml of Strong Coffee (2 tbsp of instant coffee or chicory essence). If you do not like coffee please add 180 ml of extra dairy free milk instead.

180 ml Neutral Oil (Vegetable Oil works great)

1/2 tbsp Apple Cider Vinegar

1 tbsp of Vanilla Bean Paste

80g Whitakers Dark Chocolate Easymelt

200g Dark Chocolate (Whitaker’s Easymelts)

100ml Dairy Free Milk

75g Chocolate Chopped (Whitaker’s Easymelts are perfect for this).

40g Trex (or us Vegetable shortening)
- 40g Gluten Free Plain Flour

40ml Neutral Oil (Vegetable Oil does the job great )
- 2 tbsp Cocoa Powder

Directions
Pre-heat your oven to 160f Fan/180f Standard /350F.
How to Make the Gloop
Make your gloop using 40g/ml of oil, shortening and gluten-free flour with 2 tbsp cocoa powder. Use a hand blender or whisk and whisk until you have a smooth paste.
Spread the gloop on the inner side of the bundt tin and set to one side for now.
Making the Bundt Cake
Make up your 180 ml coffee (if using required).
Add the gluten-free flour, Xathan Gum (if required), Baking Powder, Baking Soda, salt and the Cocoa Powder to a bowl. Whisk and then sieve into another bowl.
In another medium bowl add the yogurt, milk, coffee, Apple cider vinegar, Vanilla Bean Paste whisk the ingredients until thoroughly combined.
Add 80g chopped chocolate to the batter and fold in to the mix.
Fill the bundt tin with the mixture (it will feel very thick). Smooth it and give it a shake to eliminate any pockets of air.
Put in the middle of the oven for fifty minutes and bake until a cocktail stick (or cake tester) comes out with only a few crumbs.
Take out and let rest while still in the cake tin for at least 30 minutes before you turn it out.
Leave the bundt cake to cool.
Make the Chocolate Ganache
To make the chocolate ganache, chop the chocolate into pieces, warm the dairy free milk on the hob or in the microwave until it is steaming.
Pour the milk over the chopped chocolate and leave for a couple of minutes.
Whisk the chocolate into the milk. It might be grainy at first but keep whisking it is smooth.
Drizzle the ganache on top of the bundt cake.
Melt the left over of the chocolate in the microwave (use ten second bursts) or melt over a bowl of simmering water.
Smooth out over an upside down baking tray and allow it to start hardening. When it is finger touch dry use a dinning knife to scrape shards.
Sprinkle the shards over the top of the cake.
