Ingredients
-
200g pecan halves
-
200g granulated sugar
-
1 tbsp golden syrup (optional – adds chewiness)
-
60ml water
-
½ tsp sea salt
-
½ tsp vanilla extract
-
15g unsalted butter (optional – for a glossy, rich finish)
Directions
Toast the pecans
Preheat your oven to 180°C (160°C fan) / Gas Mark 4.
Spread pecans on a baking tray and roast for 6–8 minutes until fragrant.
Set aside to cool slightly.
Make the sugar syrup
In a heavy-based saucepan, combine the sugar, golden syrup (if using), and water.
Heat gently, swirling (not stirring), until the sugar dissolves.
Increase the heat and boil the syrup until it turns a rich amber colour (approx. 150°C on a sugar thermometer or until it smells caramelised).
This takes about 8–10 minutes.
Finish the praline
Remove from heat.
Quickly stir in the butter (if using), vanilla extract, salt, and the toasted pecans.
Work fast, as the mixture thickens quickly.
Pour and cool
Immediately pour the praline onto a baking tray lined with parchment or a silicone mat.
Use a spatula to spread it out into a thin layer.
Whitaker’s Tip
Add 50g finely chopped Whitaker’s dark chocolate to the warm praline just after pouring it onto the tray for a chocolate-studded twist!

Alternatively, crush the praline into smaller bits and sprinkle it over cakes, brownies, or ice cream to add a rich caramel crunch that enhances your desserts with every bite.
For a thoughtful touch, package the praline in cellophane bags, tie them with a ribbon, and offer them as a homemade gift that will impress friends and family with its delicious flavour and personal care.
What is Praline?
Praline is a sweet confection made by combining nuts, such as pecans or almonds, with a caramelised sugar syrup.
The mixture is often cooked until it hardens into a brittle or smooth texture, depending on the recipe.
In the UK, praline is commonly used as a treat on its own, crumbled over desserts like ice cream or cakes, or even blended into chocolates and spreads.
The process involves toasting the nuts to bring out their flavour, then mixing them with melted sugar, sometimes with added butter or vanilla for extra richness.
How to Store Your Homemade Pecan Flavoured Praline
To keep your homemade pecan-flavoured praline fresh and tasty, store it in an airtight container at room temperature away from direct sunlight and heat.
This will help maintain its crisp texture for up to two weeks.
If you live in a humid area, consider adding a small packet of silica gel or a piece of parchment paper between layers to absorb moisture.
For longer storage, place the praline in the fridge, where it can last for up to a month, though the texture might soften slightly.
Avoid freezing, as it can affect the flavour and make the praline sticky when thawed.
